162978336Harness the benefits of a trio of super foods: quinoa, berries and cinnamon with this great, tasty breakfast; a great way to start the day!

You may be trying to stick to the low carbs, but packing your carbs with cinnamon will help aid carbohydrate metabolism after your weight loss surgery. If there isn’t enough protein for you, add your favorite low fat yoghurt and reduce the quinoa portion size accordingly.

Mix it up any way you like by swapping the milk for low fat soya milk, replace the blueberries with blackberries or raspberries (or any berries you like!) or try swapping the honey for manuka honey or agave syrup.

Ingredients:

1 cup skim milk (or non-dairy alternative)
1 cup water
1 cup quinoa, thoroughly rinsed
2 cups blueberries
1 teaspoon ground cinnamon
1/3 cup chopped pecans
4 honey

Method

  1.      Mix together the milk, water a quinoa in a medium pan. Bring to the boil, reduce heat and simmer for 15 minutes (the quinoa will go transparent & most of the liquid will be absorbed). Turn off the heat and allow the quinoa to stand for 5 minutes.
  2.      While the quinoa is standing, toast your pecan nuts in a skillet for 2 or 3 minutes.
  3.      Stir the blueberries into the softened quinoa.
  4.      Serve into bowls, sprinkle with chopped nuts and drizzle a teaspoon of honey over the top of each bowl
  5.      Enjoy!
